Carrot mixed rice is easy to prepare and healthy too, as it contains vitamin-A which is good for kids especially.
Ingredients
- Cooked rice - 3 cups
- Carrots - 1
- Onion (medium) - 1
- Tomato - 1
- Green Chillie - 1-2
- Chillie powder - 1/4 tsp
- Turmeric powder - 1/4 tsp
- Masala powder - 1/4 tsp
- Curry leaves - little
- Coriander leaves - little
- Cashew nuts - 4-5
- Bay Leaf - 1
- Salt to taste
Instructions
- Grate carrot and chop onion, tomato, curry leaves and coriander leaves.
- Make nuts into small pieces.
- In three tbsp of hot oil season with bay leaves and fry cashew nuts.
- Add onion, tomato followed by curry leaves and saute it well.
- Add carrot and saute for a while.
- Now add chillie powder, turmeric powder, masala powder and little salt.
- Mix it well with sufficient water and allow to cook for three minutes.
- When the gravy becomes thick add cooked rice and required salt and mix thoroughly.
- Remove from the flame and sprinkle the chopped coriander leaves.
